I received some requests for how I made my arroz con camarones, last night, so the best place to put it is in a blog post so that it is easy to share.
I love to cook and come up with ways to make things that I have in restaurants. We have a great Mexican restaurant that has the best arroz con camarones so I dissected it, and came up with this representation.
Here is my best description of what I do, with the cheat that I used last night. This fed three people and there are leftovers for all three for lunch today (that’s what I always do with Friday night’s dinner so I have easy lunch on Saturday).
My version is saucier than most 'arroz con' dishes because we like to dip crusty french bread in the sauce. This can also be used with tortillas, you just have to use a strainer spoon to not have so much sauce for the tortilla fans.
Ingredients needed:
- 2 lbs. of large shrimp (U12 or U15), peeled and deveined (keep the shells)
- 1 medium sweet onion
- I found a great organic heirloom tomato (large) that I just had to add in
- 1 package of sliced mushrooms
- 1 can of tomato sauce
- Green peas
- Saffron
- Cumin
- Garlic powder
- Salt
- 1 bottle of Corona
- 1 box of Zatarain’s Spanish rice (this is the cheat, usually I soak Arborio rice in saffron water)
Process:
- Peel and devein the shrimp, rinse the shrimp shells and then put them in 2 cups of water and the one bottle of Corona, sprinkle in some salt and some Old Bay, boil to reduce to a nummy shrimp/beer stock.
- Heat 1 cup of water to warm in microwave, add saffron to the water, let it dissolve in a little and then pour over the shrimp and add enough additional water to cover, let sit while making the rest of the dish.
- High heat, sautée mushrooms in olive oil, addmedium chopped onion, garlic powder, salt, 2-3 teaspoons of cumin, add heirloom tomato, after onions are caramelized, let it all meld.
- Strain the shrimp stock and add it to the pot, letting it come up to a boil, dump the saffron water off of the shrimp, into the pot.
- After it is at a boil, I add the Zatarain’s (would add aborio soak at this time if I had used that method).
- Let it all boil for about 10 minutes, then add the one can of tomato sauce, let it all boil gently for another 5 minutes.
- Add the shrimp and the green peas and let is finish until the shrimp is just done.

Lots of Work to Do
Things are so busy right now. Some of the fun things that we've been doing at JewelCode are preparing our service offerings such as dictation and help desk services. We've begun serving some clients for general computer support on things other than our software and it's going well. We are building the processes and figuring out who we need to hire to make it work. We'll be able to give a few people a new job this year and that is good.
Dictation services are opening up a whole new world for me. When I started, I knew nothing about transcription and the hardware/software needed to run this service business. I am learning a lot. We are making sure that no client identifying information is being used in our process and are setting up a virtual server so that our transcribers can just sign into our server to do their work. We are creating a new database for our transcribers to enter the information into and are creating the hooks into CareComplete. It's fun to take on a new challenge and we're excited about offering more services.
We are also continuing with our web design services and our big project right now is the creation of the revised New Jersey GCM group's web site. It should be up very soon.
In today's world, we have to be aware of what our clients need and want for services. We are focused on providing those options and we love working with each and every one of you! We are blessed with so many friends in our work!

Spring is finally here!
We had a long winter, in Seattle. When we moved away from Minnesota, 12 years ago, we didn't think we would be finding so much snow and cold weather in the winter. Seattle has been shifting to colder winters so more snow for the last few years. We actually had to buy a snow shovel and sleds.
Now, spring is coming. It's late this year and so flowers are just starting to pop up. Usually our flowering trees have bloomed by now but they are just starting to bloom. It feels so good to see spring, though, and we are looking forward to warmer weather.
We lost bushes over the winter that will have to be replaced. I'm going to replace them with Zone 4 plants (Minnesota strength).
As far as business, things are very busy. We are getting new clients and existing clients are expanding their practices. It's so fun to see new practices starting because we need more and more and more geriatric care managers!

Chicago Conference
The conference was great! There were many topics that were pertinent to today's Geriatric Care Managers. The best part of a conference, for me, is seeing friends in person. It was great to catch up with so many people. Coming home after a conference is always exciting because I'm reinvigorated after being reminded of what and who we are working for. The purpose of what we're doing is highlighted in our visits with care managers.
It's not that we don't know this all year long but the conference lets us hear about the value that we've brought to those we serve and that reinforcement brings renewed life to the work that we're doing.
It's easy to get caught up in the day-to-day work of running a business. If you have not been to a National GCM Conference then I recommend that you attend one. It is renewing for everyone!

Friday Already!
I can't believe that it's Friday, already. It has been a really busy week. The kids have Spring Break next week and so I'll be working a light schedule.
I'm heading over to the local fairgrounds, tomorrow, to see Kathy and her alpacas at a big alpaca show that they have the first weekend of April, each year. Alpacas are so cute and have a lot of personality. Juliana and I giggle our way through the hundreds of them because they have interactive faces.
Cody stayed at a friend's house last weekend and he tried Banh Mi, for the first time, which is a Vietnamese sub sandwich. I recreated the recipe last night, based on what he told me about it and looking at recipes on-line. He and I loved it, Jeff--not so much. He'd be happy with a burger every night.
This week I finished up our new brochure about CareComplete™ that shows a larger care/case management group or agency how they can successfully use CareComplete™. Our solution is being implemented in large groups now and with the new branch security that we've built in, it has even more of an appeal. We were recently approached by a company, in Tennessee, to add the ability to limit care managers to only see their own case files and to have branch level security for administrators and general users. We didn't have the feature, already, so the company was going to try a competitor's product. They came back to us, a couple of weeks later, and we added the feature in for them in a couple of weeks. They are fully up and going with us and the security is going to be good for many others.

Juliana Part Two
10 days ago it was the dog bite, now it's a horrible raised welt kind of rash from forehead to neck with spots from there down. This morning, support responses were delayed and I sincerely apologize. I was at Urgent Care with Juliana to see what was going on with her. I was a little fearful that it might be the measles. She's fully vaccinated, so didn't expect that to be the case.
The doctor says that she is allergic to the antibiotic that she was given for the dog bite. The girl can't catch a break. He told us to give her Benadryl for the next 6 days, around the clock. My poor girl!
I have decided to just forget about the money that I paid for the swim lessons that we've had to miss due to dog bites and allergic reactions. I'll consider it a contribution to the facility.
Work is busier than ever. We're getting ready for the conference in Chicago and there is so much to be done! We created a new booth display and are working on some other goodies. I ordered some organic lollipops (that are also Kosher) from YummyEarth that are made from pure fruit juice and they are so good! I'll be handing them out at the table. They are way better than a pen, although there will be pens also. The one thing that the kids and I noticed about the lollipops is that there is no after taste at all. Can't wait to share them with you all!
We just finished another product option now that is Assessments Only. This version is used to only create Assessments and Care Plans and doesn't have any billing or other features built into it. It allows us to sell a version of our software for the assessments and care plans that will work for those who already have billing software.
We are working on our next product option and will let you know as soon as it is ready. Have a great week everyone!!

When a Dog Bites ...
Juliana was over at a friend's house for a sleepover last Friday. This is the second time that we've tried a sleepover with this friend, the first time she wasn't ready to go to bed without her family. That was a year ago. This time she thought she was ready. So, I dropped her off at 5:30 and then stopped by the grocery store to pick up some things for the boy's dinner. I was heading out to a mom's only party for the evening and was just getting ready to leave when the phone rang.
It was the mom at the sleepover house. "Lisa, I'm very sorry but you have to come and get Juliana, there's been an accident." I'm the kind of mom that goes right to the image of blood spurting. She told me that her dog had bit Juliana and that it was bad. I called the party host to let her know that I would not be able to make it and then jumped right in the car and headed out.
Juliana was surrounded on the couch by crying girls and an upset mom. I was met with the daughters telling me that their dog had to be put down. I went and got Juliana right away and got her on my lap. I lifted the bandage. Oh my goodness, I've never seen a puncture wound on my child before. The room spun for a second but I quickly kicked into mom mode. Do you have children's ibuprofen? Can you call urgent care and see if they're still open? Juliana, don't look at that, look at mommy.
Urgent care was closed so I knew we were off to the emergency room, on a Friday night, it was going to be a late night. Juliana was in a lot of pain. She is a tough little girl and yet she winced in pain with each move. I got her in the car and buckled with a pillow for support and a blanket to warm her up. I called Jeff and told him that they needed to be ready to leave as I was coming to the house and we were going straight to the emergency room.
I backed into our driveway so we could leave faster and hopped in the back seat with Juliana. There was no way that I would avoid a ticket on the way so it was better to have my cautious driver husband do that part.
We got to the emergency room and every move was so painful for her. She was trying very hard to be tough but it was bad. I filled out the paperwork and they had us back in a room within 15 minutes. I really felt bad for all of the people that we went before because I've been one of those people but she needed some relief. The doctor came in and got her some Tylenol with Codeine. 12 minutes later my baby was peaceful and back to her usual funny self. They were able to wash it out without any numbing because she was so affected by the Codeine that she didn't care.
They wrapped it and sent us home with the pain medication and antibiotic prescription sheet. We drove through Wendy's to get a bite, it was 10:30 and nobody had dinner yet. We got home and since our only 24-hour pharmacy is in the next town, Jeff left us at home for me to get the kids in bed and he went to fill the prescription (it's in a high crime/gang area).
I put Juliana in bed and laid down next to her. She quickly drifted off. I got Cody to bed and took care of our dogs and everything returned to peaceful quiet. Juliana hasn't needed to take another dose of the Tylenol with Codeine, she has done fine with a dose of ibuprofen when she is struggling. She is doing fairly well and the wound is healing. We'll look at it again, today, to see how it is doing. She is tough.
I hope to never see another dog bite on my children, especially Juliana who is a big animal lover. I agree with the emergency room staff that we were lucky that it was not her face. It was scary but it all turned out alright in the end!
